Better than Sweet Potato Fries

So i've recently discovered my favorite new addition that makes a perfect side to any burger, on top of salads or just an awesome, healthy snack.

Carrot "fries". YES you read correct. Carrots can be manipulated in such a way that even a carrot abhor-er, such as my Husband, LOVES them.

It's such a super simple and healthy recipe. No frying, no sugar and very little added ingredients that you can pronounce!

Carrot "Fries"


14 Large carrots(This generally will feed 3 of us with baby included)
2 tbsp of butter (Coconut oil can also be subbed)
1 tsp dill
Salt & pepper to taste

Heat oven to 400. Wash carrots and cut in half, then julienne them. They will be about 3-4in long and about half an inch wide. Put carrots in a bowl and pour melted butter over and coat thoroughly. Spread the carrots on a cookie sheet and season with dill, salt and pepper. Bake for 30 min depending on how soft or crisp you like your fries. Turn once while baking. ENJOY!

I made these last night, and it seems I never make enough because I always get asked if there is more! You will be asked by everyone, what the recipe is, I know I have! You will feel proud to have this beautiful, healthy addition to any meal!
